These Red Velvet Pancakes From Brooklyn Commune Require a Side of Insulin
I wouldn’t bill Windsor Terrace as a culinary destination. As much as I love living here, the neighborhood is not necessarily rife with amazing things to eat. So when something wondrously tasty does show up it is all the more of a mitzvah.
The wonderfully out of place Brooklyn Commune (on the corner of Greenwood Ave and Prospect Avenue) is a god send. Not only is it one of the sole providers of healthy, gluten-free and vegan delights to be found in the area; it is très delicious. And now Founder and Head Chef, Christopher Scott, has developed what I consider his pièce de résistance: Red Velvet Pancakes.
Yeah. Soak it in.
Scott, who described the pancakes to me as “velvety and always smooth," credits the dish’s sudden popularity to the delightful accoutrements: “What takes it over the top are the toppings," he says. "The salted pecan maple syrup and the white chocolate. And then to bring some balance to the diabetic punch you are getting, there is some sour crème fraiche on top.”
Punch indeed! The saccharine-saturated short stack is definitely not for those devoid of a sweet tooth. There are enough flavors somersaulting over each to give the dish a playful vibrancy.
Even though I only got through about 2/3 of my RV cakes, I was in heaven for every bite. The experience was the perfect way to start a Saturday, or more precisely false-start a Saturday. 20 minutes after finishing the meal I'd returned to bed, deep in a sugar coma.
